Ingredients

The ingredients are:
  • 1 pound mandarin oranges (4 oranges)
  • 50 grams butter
  • 500 grams white fish (firm, cut into 4 fillets)
  • Seasoning
  • 1/2 pound mandarin oranges (2 imperial mandarin oranges, peeled and segmented)
  • 2 tablespoons dill, snipped

How to Make

  • Step 1: Finely grate rind of 1 mandarin.

  • Step 2: Juice 2 mandarins and set aside. Peel and segment the remaining 2 mandarins and set aside.

  • Step 3: Melt butter in a non-stick frying pan on medium and add the rind and swirl to combine.

  • Step 4: Lightly season fish (optional) and cook the fish for 1-2 mins each side, until golden and cooked through remove fish and drain on kitchen paper. (Keep fish warm).

  • Step 5: Reheat butter in pan. Add juice and simmer for 30 seconds.

  • Step 6: Add mandarin segments and dill, swirl to warm through. Top fish with mandarin and dill Sauce.

  • Step 7: Serve with chips and salad.
