  • 2 large eggs, beaten
  • 3/4 cup granulated sugar
  • 1 tablespoon melted butter
  • 2 1/2 cups all purpose flour
  • 2 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 cup chopped dates
  • 1 cup milk
  • 1 teaspoon lemon extract
  • Oil, for deep-frying

How to Make

  • Step 1: Heat oil in deep-fat fryer to 375 F.

  • Step 2: In a bowl, combine beaten eggs, sugar and melted butter; beat well.

  • Step 3: In another bowl, combine flour with baking powder, salt and nutmeg. Fold in dates.

  • Step 4: Mix lemon extract with milk. Add dry ingredients to egg mixture alternately with milk.

  • Step 5: Drop batter by tablespoonfuls, 2 or 3 at a time, into hot oil and fry until crisp and brown, about 3 minutes frying time, turning once. Drain on paper towels.
