Ingredients

The ingredients are:
  • FOR MEATBALLS
  • 1 1/2 pounds extra lean ground beef (or ground turkey, 680 grams)
  • 1/4 cup hoisin sauce
  • 1/4 cup bread crumbs (dry, unseasoned)
  • 3 tablespoons finely minced green onions
  • 1 tablespoon minced fresh cilantro
  • 1 large egg
  • 2 teaspoon minced garlic
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon sesame oil
  • Salt & pepper to taste
  • FOR THE SAUCE
  • 240 grams coconut milk (1 cup)
  • 1/3 cup hoisin sauce
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons peanut butter
  • 2 tablespoon minced basil leaves (fresh, or fresh cilantro)
  • 1 tablespoons grated ginger root
  • 1 teaspoon grated lemon zest
  • 1/8 teaspoon crushed red pepper flakes

How to Make

  • Step 1: Preheat oven to 400F.

  • Step 2: Spray a rimmed cookie sheet or large baking pan with cooking spray and set aside.

  • Step 3: Combine all meatball ingredients in a large bowl (using your hands works best).

  • Step 4: Form meat mixture into 1 - 1 1/2 inch meatballs, about 40 in total.

  • Step 5: Place on prepared pan.

  • Step 6: Bake for 15 -18 minutes, until meatballs are cooked through and nicely browned on the outside.

  • Step 7: While meatballs are cooking, prepare sauce.

  • Step 8: In a deep, non-stick skillet, whisk together all sauce ingredients.

  • Step 9: Heat over medium high heat, stirring constantly, until sauce boils.

  • Step 10: Reduce heat to medium and cook sauce, uncovered for 3 minutes, stirring often.

  • Step 11: Sauce will thicken a bit.

  • Step 12: Add cooked meatballs to sauce and mix well.

  • Step 13: Serve hot.
