  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 1/2 ounce) tomatoes (with juice)
  • 1 can (7 ounce) diced green chilies, drained
  • 1 can (15 ounce) whole kernel corn, undrained
  • 1 1/2 teaspoon dried oregano leaves, crushed
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground red pepper
  • 2 tablespoon cornmeal (yellow)

How to Make

  • Step 1: Combine all ingredients, except cornmeal, in a slow cooker mixing well.

  • Step 2: Cover and cook on low 7 to 8 hours or until meat is tender.

  • Step 3: Turn control to high.

  • Step 4: Stir in cornmeal.

  • Step 5: Cover and cook on high 20 to 25 minutes.
