Ingredients

The ingredients are:
  • 2 tablespoons butter
  • 1 pound lamb (cut ito 1/2″ cubes)
  • 4 large bell peppers (sweet)
  • 1 1/2 cups tomatoes, chopped (fresh)
  • 1 cup bread crumbs (white, unseasoned)
  • 1/4 cup yellow onion, chopped
  • 1/2 teaspoon ground coriander seed
  • 1/2 teaspoon ground cumin
  • 1 tablespoon fresh cilantro, chopped
  • 1/2 teaspoon black pepper, freshly ground, to taste
  • 1 teaspoon salt, to taste

How to Make

  • Step 1: Melt butter in a large skillet. Add lamb and saute lamb until cooked through.

  • Step 2: Add the tomatoes, bread crumbs, onion, coriander seed and cumin.

  • Step 3: Salt and pepper to taste.

  • Step 4: Carefully remove tops and seeds from peppers and fill with lamb mixture.

  • Step 5: Bake in a preheated 350 degree oven for 1 hour, or until peppers are tender.

  • Step 6: If desired, place peppers under broiler for a few seconds to brown tops. Sprinkle with fresh cilantro
