The ingredients are:
  • 3 cups cauliflower, chopped
  • 2 cups yellow onions, chopped
  • 8 ounces bacon (8 slices, chopped)
  • 2 cups potatoes, chopped (peeled)
  • 4 cups vegetable broth (stock)
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • TOAST
  • 8 ounces bread (8 slices french bread)
  • 4 teaspoons Dijon mustard
  • 1/2 cups shredded cheddar cheese

How to Make

  • Step 1: Fry bacon. Remove but reserve 1/2 for topping.

  • Step 2: Fry the onion in bacon fat until soft.

  • Step 3: Add potatoes and cauliflower, fry 2 more minutes, then add in the stock.

  • Step 4: Add bacon, cook 15 minutes.

  • Step 5: Mash until mixed. Add in the milk but do not boil.

  • Step 6: Meanwhile, heat skillet.

  • Step 7: Smear mustard on one side bread and butter on bottom. Top with cheese on the mustard side. Place in hot skillet and brown until melty, can finish under broiler.
