Step 1: Fry bacon. Remove but reserve 1/2 for topping.
Step 2: Fry the onion in bacon fat until soft.
Step 3: Add potatoes and cauliflower, fry 2 more minutes, then add in the stock.
Step 4: Add bacon, cook 15 minutes.
Step 5: Mash until mixed. Add in the milk but do not boil.
Step 6: Meanwhile, heat skillet.
Step 7: Smear mustard on one side bread and butter on bottom. Top with cheese on the mustard side. Place in hot skillet and brown until melty, can finish under broiler.
