Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1 yellow onion (finely chopped)
  • 500 grams pork sausage (Italian-style pork sausages, about 6)
  • 1 1/2 tablespoons rosemary leaves (chopped)
  • 2 garlic cloves (finely chopped)
  • 1 cup red wine (250ml)
  • 1 tablespoons tomato paste
  • 1 can 400 gram) chopped tomatoes
  • 400 grams penne pasta (Reigate)
  • TO SERVE
  • Grated parmesan,
  • Crusty bread
  • Basil leaves to serve

How to Make

  • Step 1: Heat oil in a large pan over medium heat and cook onion, stirring for 2-3 minutes until softened.

  • Step 2: Add the sausage, rosemary and garlic and cook, breaking the sausage up with a wooden spoon, for 3-4 minutes until the sausage is browned.

  • Step 3: Drain excess oil from the pan, then add wine and allow to bubble for 2-3 minutes until slightly reduced and then add tomato paste and stir for 30 seconds, then stir in tomatoes and season, then increase the heat to high and bring to the boil and then reduce the heat to low and simmer for 15 minutes until reduced.

  • Step 4: Meanwhile, cook the pasta according to packet instructions, drain and then divide among bowls and serve with the sausage ragu, parmesan, crusty bread and basil.
