Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1 chopped shallot (or 1 onion, chopped)
  • 1 1/2 pounds baby bok choy (5 baby bok choy, chopped)
  • 1 1/2 pounds zucchini (3 zucchini, sliced)
  • 2 tablespoons fresh oregano, chopped
  • 1 teaspoon cumin
  • 3 green onions, sliced (or use chives, chopped, garnish)

How to Make

  • Step 1: Heat oil in skillet over medium high heat. Add shallot (or onion) and cook until softened (5 minutes). Add the bok choy and cook another 5 minutes. Add the zucchini and cook for 5 minutes. Stir in the oregano and cumin. Put in a serving dish and add the green onions or chives on top; toss well.
