Ingredients

The ingredients are:
  • 1 medium red bell pepper, roasted and seeded from a jar
  • 1 medium zucchini, sliced lengthwise into 4 slices
  • 6 cherry tomatoes
  • 2 slices onion (thick slices of a large white onion)
  • 3 corn ears (sweet corn)
  • 1/4 teaspoon fiesta lime seasoning
  • 1 tablespoon fresh basil, chopped
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil
  • 8 ounces orzo (uncooked)
  • 2 tablespoons butter
  • 1/4 teaspoon salt

How to Make

  • Step 1: Preheat outdoor grill to medium heat. Or you can use an indoor stove-top grill, but don't preheat it till just a few minutes before you're ready to place veggies on it.

  • Step 2: Spray some non-stick butter-flavored spray on veggies to be grilled. Sprinkle the fiesta lime seasoning on the zucchini. Place on medium-heated grill. Keep turning the corn till it's charred on all sides. The tomatoes and zucchini will be done first, so watch them carefully, and remove them when they're done. When all the veggies are done, let them cool off somewhat. Then chop them up, including the jarred roasted red bell pepper. Cut the corn off the cobs. Mix all the veggies in a bowl with the olive oil, salt, pepper and chopped basil. Set aside.

  • Step 3: Cook the orzo according to the directions on the box until desired doneness (I like mine a little more done then al dente). Drain and return to pan with butter and salt. Reheat grilled veggies in microwave and add to the orzo. Stir well to mix.
