Ingredients

The ingredients are:
  • 1 crusty Greek-style bread, sliced into 1/2 to 3/4-inch thick slices (can use French or Italian bread)
  • 1 cup olive oil, plus more for brushing on bread
  • Salt, fresh ground black pepper and garlic powder
  • 1/4 cup fresh lemon juice (no bottled!)
  • 1 tablespoon chopped fresh dill, plus more for garnish
  • 1 small garlic cove, minced (can omit if desired)
  • 1 large English cucumbers, peeled, quartered and cut into 1/2-inch dice (or use 2 small)
  • 2 large ripe tomatoes, finelychopped
  • 1 red onion, peeled, halved and thinly sliced or chopped
  • Crumbled feta cheese (use as much as you like)
  • Greek kalamata olives (optional, use a much as you like)

How to Make

  • Step 1: Preheat the grill.

  • Step 2: Brush the bread with olive oil on both sides, then season with salt pepper and garlic powder.

  • Step 3: Grill bread on both sides until lightly golden brown.

  • Step 4: Remove the bread to a platter and let sit at room temperature to get slightly hard.

  • Step 5: Meanwhile in a large; bowl whisk together 1 cup olive oil with fresh lemon juice, dill, and garlic, then season lightly with salt and pepper to taste.

  • Step 6: Mix in the cucumber, tomatoes, red onion, and feta into the oil mixture and let stand at room temperature for about 40 minutes.

  • Step 7: Spoon the mixture over the grilled bread slices.

  • Step 8: Drizzle with more olive oil if desired, sprinkle with olives then serve immediately.
