Ingredients

The ingredients are:
  • 1 (5 to 6 pound) boneless toupie ham (about 2.5 to 3 kg)
  • 1 yellow onion, coarsely diced
  • 2 celery stalks
  • 2 carrots, diced
  • Cloves (a few)
  • 2 tablespoons dry mustard
  • Water, cold, to cover the ham
  • GLAZE
  • 1 1/2 cups maple syrup
  • 2 tablespoons brown sugar
  • 3 tablespoons prepared mustard
  • 1/2 teaspoon ground cloves (or several whole cloves)
  • 341 ml beer (dark)
  • Decoration (optional)
  • Cloves, a handful

How to Make

  • Step 1: In a bowl, mix together all the glaze ingredients. Set aside.

  • Step 2: In a large cooking pot, place the ham.

  • Step 3: Add all the other ingredients, cover with water and bring to a boil.

  • Step 4: Cover and simmer for 60 minutes.

  • Step 5: Preheat the oven to 180°C (350°F).

  • Step 6: Remove the ham from the cooking liquid and place it in a roasting pan.

  • Step 7: Keep the cooking liquid. Remove the rind.

  • Step 8: Score the fat on the ham in a criss-cross pattern with the tip of a knife to create a diamond pattern.

  • Step 9: If you are using them, stick a whole clove in each diamond of scored fat.

  • Step 10: Top the ham with 3/4 of the glaze.

  • Step 11: Bake in the oven for 60 minutes.

  • Step 12: Moisten the ham from time to time with the glaze at the bottom of the roasting pan.

  • Step 13: If the glaze turns too syrupy, add a bit of cooking liquid.

  • Step 14: Turn up the oven heat to 190°C (375°F). Top the ham with the rest of the glaze.

  • Step 15: Finish cooking for 15 to 20 minutes for a well-glazed ham.
