Ingredients

The ingredients are:
  • 2 cups mashed potato
  • 1 tablespoon butter, melted
  • 2 tablespoons milk
  • 4 large eggs (separated)
  • Lemon juice (1 squeeze)
  • 1 tablespoon chives, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper, to taste
  • 1 tablespoon butter (additional, for frying)

How to Make

  • Step 1: Crack the eggs and separate the egg whites from the egg yolks.

  • Step 2: Lightly beat the yolks and mix them into the mashed potatoes along with the melted (and cooled) butter, milk, lemon juice, chives and seasonings.

  • Step 3: Melt the additional butter in an OVEN-SAFE (or skillet )omelet pan over medium heat.

  • Step 4: Whisk the egg whites until stiff and fold them into the potato mixture.

  • Step 5: Pour the combined mixture into the hot omelet pan.

  • Step 6: Cook until golden brown on the bottom(about 6 to 8 minutes).

  • Step 7: Place the pan under the broiler to finish and puff it up (about 5 minutes).

  • Step 8: Slice into 3 wedges and serve while hot.
