Ingredients

The ingredients are:
  • 1 cup orange juice (only freshly squeezed juice from 3-4 oranges)
  • 1/4 cup grated orange zest
  • 5 large yolks
  • 5 egg whites (room temperature)
  • 2 cups all-purpose flour (sifted)
  • 1 teaspoon baking powder
  • 2 cups granulated sugar
  • 1 cup olive oil (extra-virgin, or could use canola oil or vegetable oil)

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Grease a tube pan then lightly coat with flour.

  • Step 3: In a bowl, combine baking powder, flour and orange zest until well combined.

  • Step 4: In a separate bowl, with a mixer, beat the egg yolks, sugar and oil until well blended, 4 minutes. Add the juice and flour mixture, beat ingredients until a smooth batter is formed.

  • Step 5: In a another separate bowl, beat all the egg whites until stiff peaks form. With a spatula, fold (DO NOT BEAT WITH MIXER) the egg whites into the wet batter until all ingredients are well blended.

  • Step 6: Pour the batter into the tube pan.

  • Step 7: Bake for approximately 1 hour or until cake tests done. Cool cake.

  • Step 8: When cooled remove from tube pan and place on cake plate.

  • Step 9: Optional: sprinkle some powdered sugar on top.
