Ingredients

The ingredients are:
  • 1/2 pound shrimp (shelled and deveined, cooked)
  • 1 teaspoon Old Bay Seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon lemon pepper
  • 1 tablespoon fresh dill weed, finely chopped
  • 1 packet (.7 gram) True Lime crystallized lime (*)
  • 2 tablespoons grated parmesan cheese
  • 3 tablespoons dried bread crumbs (unseasoned)
  • 1 teaspoon garlic, minced
  • 2 teaspoons olive oil
  • 8 ounces fresh crimini mushrooms (whole)

How to Make

  • Step 1: Preheat oven to 400° F.

  • Step 2: Chop shrimp fairly small. Put in a bowl with the rest of the ingredients EXCEPT the mushrooms. Mix well.

  • Step 3: Choose large enough crimini mushrooms for stuffing. Wipe the dirt off them and remove the stems. Place mushroom caps, open-side up, in an 8" x 8" baking dish that has been sprayed with non-stick cooking spray. Cut off a small portion of the end of the stems and discard. Chop up the rest of the stems fairly small and add to the shrimp mixture. Mix well.

  • Step 4: Stuff mushroom caps with shrimp mixture till heaping or all the filling is used up.

  • Step 5: Bake in preheated 400° F oven for 15-20 minutes or until mushrooms have released their juices and the filling is golden brown.

  • Step 6: *You can find the True Lime crystallized lime on their website at truelemondotcom. Don't choose the True Lime limeade. Choose the crystallized lime. Then you can do a search to find where you can get it at a store near you. Or if you have fresh limes, you can just use the zest of 1 lime.
