Step 1: In a large skillet, cook the meat until browned.
Step 2: Add the onions and diced bell pepper and cook until soft, about 5 minutes.
Step 3: Add the garlic and cook for 30 more seconds.
Step 4: Meanwhile, in a blender mix the tomato sauce, chipotle chile, oregano, ground cumin, smoked paprika, allspice, cayenne and Worcestershire sauce.
Step 5: Pour tomato salsa into the skillet along with the stock, ketchup and half of the cilantro.
Step 6: Stir until well combined. Cook uncovered for 15 minutes.
Step 7: Stir in the remaining cilantro and lime juice.
Step 8: Adjust seasonings and add salt and black pepper to taste.
Step 9: Serve on warm buns with guacamole, cilantro, onion, jalapeño slices .
