Ingredients

The ingredients are:
  • 1 1/2 pounds ground beef
  • 1 chipotle chile (en adobo)
  • 1/2 cup yellow onion, diced
  • 1/2 cup bell pepper, seeds and stem removed, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounce) tomato sauce
  • 2 teaspoons oregano
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon ground allspice
  • Cayenne, pinch
  • 2 teaspoons Worcestershire sauce
  • 1 cup beef broth
  • 2 tablespoons ketchup
  • 1/8 cup cilantro, divided
  • 1 tablespoon lime juice
  • 1 teaspoons alt
  • 1/2 teaspoon black pepper, to taste
  • 9 ounces bread buns (6 warm buns, for serving)
  • 6 tablespoons guacamole (for serving)
  • 1 tablespoon cilantro, for serving
  • 6 onion slices, for serving
  • 1 tablespoon sliced jalepeños, for serving

How to Make

  • Step 1: In a large skillet, cook the meat until browned.

  • Step 2: Add the onions and diced bell pepper and cook until soft, about 5 minutes.

  • Step 3: Add the garlic and cook for 30 more seconds.

  • Step 4: Meanwhile, in a blender mix the tomato sauce, chipotle chile, oregano, ground cumin, smoked paprika, allspice, cayenne and Worcestershire sauce.

  • Step 5: Pour tomato salsa into the skillet along with the stock, ketchup and half of the cilantro.

  • Step 6: Stir until well combined. Cook uncovered for 15 minutes.

  • Step 7: Stir in the remaining cilantro and lime juice.

  • Step 8: Adjust seasonings and add salt and black pepper to taste.

  • Step 9: Serve on warm buns with guacamole, cilantro, onion, jalapeño slices .
