Ingredients

The ingredients are:
  • 3 tablespoons rice vinegar (unseasoned)
  • 2 tablespoons gingerroot, grated (peeled)
  • 2 tablespoons oil (peanut oil)
  • 2 tablespoons sesame oil
  • 2 tablespoons honey
  • 1 tablespoon cilantro, chopped
  • 1 serrano chile, seeded and minced
  • White pepper
  • 1 1/2 pounds fresh tuna (ahi tuna, 1 1/4 inch thick and cut into 1 inch cubes)
  • Cooking spray
  • 1 red bell pepper, cut into 1 inch squares
  • 1 yellow onion, cut into 1 inch squares
  • Chilantro

How to Make

  • Step 1: In a bowl whisk together the first 8 ingredients (vinegar - pepper); transfer 3 tablespoons to a small cup or bowl and reserve.

  • Step 2: Add tuna to the remaining oil mixture; toss. Refrigerate for 30 - 45 minutes.

  • Step 3: Spray grill rack with cooking spray.

  • Step 4: Prepare gill to medium-high heat.

  • Step 5: On skewers, alternate tuna, bell pepper and onion squares. Repeat for all skewers.

  • Step 6: Grill skewers to desired doneness, turning frequently (3-5 minutes).

  • Step 7: Transfer to a platter and drizzle remaining marinade over and sprinkle with cilantro.
