  • The following recipe serves 6 people.

Ingredients

The ingredients are:
  • 1/2 pound bacon (finely chopped)
  • 2 pounds ground beef
  • Seasoned salt and pepper (or Creole seasoning is really good to use)
  • 1 medium yellow onion, chopped
  • 1 cup dry rice
  • 1/2 small cabbage (green cabbage, about 3-4 large handfuls, roughly chopped)
  • 1 can (8 ounce) tomato sauce
  • 2 cups chicken broth (or water, I just use the tomato sauce can twice)
  • 1 can (14 ounce) diced tomatoes (undrained)
  • 1/3 cup grated Parmesan cheese (to taste)
  • 1 to 1 1/2 cups shredded cheese (I used Colby Jack)

How to Make

  • Step 1: In large skillet cook the bacon pieces until crisp; remove and set aside, leave the bacon fat in the skillet.

  • Step 2: Add in ground beef and onions; cook until beef is well browned, drain grease.

  • Step 3: Add the cooked bacon back to skillet along with the rice, cabbage, tomato sauce, 2 cups of chicken broth or water and diced tomatoes. Stir. Let it come to a boil and then reduce heat to medium low and cover to simmer for about 30-45 minutes or until rice is done and cabbage is soft. Do not lift lid before 20 minutes to make sure rice cooks well.

  • Step 4: Once cooked, Sprinkle with Parmesan cheese then shredded cheese; cover with lid to melt a few minutes.
