  • 1 bag (16 ounce) potatoes (frozen O'brien potatoes)
  • 1 pound ground beef
  • 1/2 cup whole kernel corn
  • 1/4 cup cheese, shredded
  • 3 tablespoons bacon grease
  • 1 teaspoon chili powder
  • 1 teaspoon dried cumin
  • 1 teaspoon parsley
  • 1/2 teaspoon pepper, to taste
  • 4 large eggs (or more)

How to Make

  • Step 1: Add tablespoon of oil to the skillet and turn the heat to medium high.

  • Step 2: Add the potatoes, chili powder, cumin, parsley, pepper

  • Step 3: And continue cooking. Add in the ground beef. Stirring the potatoes and onion until they are a nice golden brown color and cooked all the way through. Reduce heat if the potatoes or onion are getting too brown.

  • Step 4: Add corn and cook another minute or two.

  • Step 5: Remove potato/meat mixture from heat and top with shredded cheese, keep warm.

  • Step 6: In another skillet, fry eggs over easy.
