Step 1: Add tablespoon of oil to the skillet and turn the heat to medium high.
Step 2: Add the potatoes, chili powder, cumin, parsley, pepper
Step 3: And continue cooking. Add in the ground beef. Stirring the potatoes and onion until they are a nice golden brown color and cooked all the way through. Reduce heat if the potatoes or onion are getting too brown.
Step 4: Add corn and cook another minute or two.
Step 5: Remove potato/meat mixture from heat and top with shredded cheese, keep warm.
Step 6: In another skillet, fry eggs over easy.
