Ingredients

The ingredients are:
  • 3 pounds chicken drumsticks
  • 3 pounds chicken breast
  • 1 pound tomatoes, sliced
  • 2 lemons ,cut in 1/2
  • FOR MARINADE
  • 1/4 cup red harissa sauce (Mina brand)
  • 1/4 cup olive oil
  • 4 whole lemons, juice
  • 2 teaspoons turmeric powder
  • 1 teaspoon onion powder
  • 2 teaspoon cumin powder
  • 1 teaspoon coriander seed (ground)
  • 2 teaspoon paprika
  • 1/2 teaspoon pepper
  • 1 teaspoon salt (Celtic sea salt)
  • 4 garlic cloves, crushed
  • 1/8 cup cilantro, chopped

How to Make

  • Step 1: In a large mixing bowl place the marinade ingredients and mix through

  • Step 2: The marinade will be thick.

  • Step 3: Lightly score chicken piece. This will allow the marinade to penetrate the meat.

  • Step 4: Add the chicken breast and drumsticks to the bowl and mix in with the marinade making sure each chicken piece is covered nicely. Let the chicken sit covered in the refrigerator overnight.

  • Step 5: Preheat your grill.

  • Step 6: Add the chicken pieces and cook over medium to low heat for 30 minutes or until chicken is done to your liking (I like mine very well done). It may take slightly more time.

  • Step 7: Add sliced tomatoes and lemons to your grill the last 3-4 minutes of cooking to serve with the chicken.
