Ingredients

The ingredients are:
  • 2 tablespoons oil (vegetable oil)
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 1 habanero pepper, stemmed, seeded and minced
  • 1/2 cup brown sugar
  • 1 pound peaches (4 ripe peaches pitted, skinned and cut into medium dice)
  • 1 1/2 pounds (3 ripe mango, pitted, skinned and cut into medium dice)
  • 2 whole limes (zest and juice of 2 limes)
  • 1/2 cup rice wine vinegar
  • 1/4 teaspoon ground coriander (or more)
  • Salt and pepper

How to Make

  • Step 1: In a saucepan, heat the oil. Add the onion and garlic and cook over moderately low heat, stirring occasionally, until softened, about 7 minutes.

  • Step 2: Add the brown sugar and cook, stirring occasionally, until the sugar melts. Add the remaining ingredients and cook over low heat until the fruit starts to break down and get very soft (about 20 minutes).

  • Step 3: Cool slightly then transfer the mixture to a blender or food processor and puree until smooth. Season with salt and pepper.

  • Step 4: Cool down to room temperature then refrigerate 24 hours or longer before using.
