Ingredients

The ingredients are:
  • FOR SAUCE
  • 1/2 cup mayonnaise
  • 1/4 teaspoon garlic powder
  • 2 tablespoons white vinegar
  • 1 teaspoon coarsely ground fresh pepper
  • 1 teaspoon fresh lemon juice
  • 1/8 teaspoon salt (to taste)
  • FOR PORK
  • 2 1/2 pounds pork butt (roast)
  • Salt & pepper
  • Oil
  • BRAISING LIQUID
  • 1 cup apple cider vinegar
  • 1/2 cup water
  • 1/3 cup brown sugar
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon ground red pepper
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • TOP SERVE
  • Biscuits (baked and kept warm)

How to Make

  • Step 1: To prepare sauce, combine the first 5 ingredients in a small bowl. Cover and chill.

  • TO MAKE THE ROAST

  • Step 2: Slice pork roast into fourths. Season the roast pieces with salt and pepper. In a large pot, heat oil. Add pork and brown each piece in hot oil on all sides until well browned.

  • FOR BRAISING LIQUID

  • Step 3: Combine all the ingredients in a medium saucepan; bring to a boil. Pour the sauce over browned pork, Cover, reduce heat, and simmer around 1 1/2 - 2 hours or until tender.

  • Step 4: Remove pork from cooking liquid; shred with 2 forks. Place pork in a serving dish; pour cooking liquid over pork.

  • Step 5: Serve pork and prepared sauce with warm biscuits.
