Ingredients

The ingredients are:
  • 2 pounds beef short ribs
  • Oil, for browning
  • 2 yellow onions, chopped
  • 3/4 pound carrots (3 large, coarsely grated)
  • 4 to 6 garlic cloves, chopped finely
  • 3 ribs celery, chopped
  • 1 pound beets (2 large beets, peeled and grated (don't use canned)
  • 1 can (32 ounce) whole tomatoes (with their juices, crush the tomatoes with your hands or same amount stewed tomatoes with juice)
  • 2 tablespoons tomato paste
  • 1/3 cup rice vinegar vinegar (or white vinegar)
  • 1/2 cup granulated sugar
  • 8 cups chicken stock
  • 1 head green cabbage, sliced very thinly
  • Salt and pepper
  • Hot sauce (optional)

How to Make

  • Step 1: Preheat the oven to 400 degrees F.

  • Step 2: Heat oil in a large pot. Season the short ribs with salt and pepper. Brown ribs in oil until very well browned, about 12-15 minutes. Remove and set aside.

  • Step 3: To the pot (adding in more oil if needed) add the onions and continue cooking until the onions are lightly browned and are quite limp about 10-12 minutes, add in the garlic the last few minutes of cooking

  • Step 4: Add the remaining ingredients including the browned meat. Bring to a boil, the Allow to simmer part covered over med-low heat for 1 1/2 hours or until beef is tender. Adjust seasoning with salt and freshly ground black pepper.
