Ingredients

The ingredients are:
  • 1 pound chicken liver (washed well under cold water, DO NOT USE beef or calf liver!)
  • 1 large yellow onion, diced
  • 4 large eggs (hard-boiled)
  • 1/3 cup chicken fat (Schmaltz)
  • 1/2 teaspoon Kosher salt (to taste)
  • Pepper, to taste

How to Make

  • Step 1: Oven-broil all the chicken livers.

  • Step 2: In a skillet heat the chicken fat. Add onion, brown in hot fat until onions are just a very light golden brown.

  • Step 3: Mix cooked livers with the browned onion and the chicken fat from the skillet, mashed eggs and salt until well blended. Add in pepper.

  • Step 4: Chill for a few hours. Serve with crackers.
