Ingredients

The ingredients are:
  • FOR THE CRUST
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 7 tablespoons unsalted butter (cut into cubes and frozen)
  • 7 tablespoons vegetables shortening (Crisco, cut into 1/2 inch cubes and frozen)
  • 5 tablespoons water (ice water, may need more)
  • 1 teaspoon apple cider vinegar
  • FOR THE FILLING
  • 1/2 cup granulated sugar
  • 1 tablespoon granulated sugar
  • 1/4 cup cornstarch
  • 1/4 cup water
  • 1/4 cup frozen orange juice concentrate
  • 12 ounces raspberries (3 cups, frozen and unthawed)
  • 8 ounces blackberries (2 cups, frozen and unthawed)
  • 1 tablespoon milk

How to Make

  • TO MAKE THE CRUST

  • Step 1: Using a food processor process the dry ingredients (flour - baking powder) and then using on/off turns add the butter and shortening; processing until coarse meal forms.

  • Step 2: Mix 5 tablespoons ice water and vinegar in a cup and add to mixture in processor; using on/off turns process until moist clumps forms; adding more ice water if needed.

  • Step 3: Gather dough into a ball and divide in half into two balls; flatten each to a disk and wrap in plastic wrap and chill for one hour (***can be prepared one day ahead; keep chilled). One disk should be a bit larger than the other.

  • Step 4: Roll out larger disk on a lightly floured board to a 12 inch round; transfer to a 9 inch diameter pie dish. Place in freezer.

  • Step 5: Roll out smaller disk on a floured board to a 10 inch round. Cut into 1/2 inch wide strips. Transfer strips to a baking sheet and chill.

  • TO MAKE THE FILLING

  • Step 6: Preheat oven to 400 degrees F.

  • Step 7: In a skillet mix together 1/2 cup sugar and cornstarch. Stir in 1/4 cup water and stir over medium high heat until mixture thickens and begins to boil. Remove from heat and stir in orange juice concentrate. Stir in berries.

  • Step 8: Remove crust from freezer and transfer filling to crust. Arrange dough strips on top, forming a lattice.

  • Step 9: Fold bottom crust over ends of strips and crimp to seal.

  • Step 10: Whisk remaining sugar (1 tablespoon) with 1 tablespoon milk for glaze and brush over the top.

  • Step 11: Bake for 1 hour and 45 minutes or until crust is brown and juices are bubbling.

  • Step 12: Cool for 1 hour before serving.
