  • 1 cup finely chopped cooked chicken
  • 1 egg, slightly beaten
  • 1/2 cup milk
  • 3 tablespoons butter, melted
  • 1 teaspoon seasoning salt
  • 1-3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon cayenne pepper
  • Fresh ground black pepper, to taste

How to Make

  • Step 1: Place corn in a bowl; slightly crush with a potato masher.

  • Step 2: Stir in chicken, egg, milk, melted butter and seasoned salt.

  • Step 3: Combine flour with baking powder and cayenne; stir into the corn mixture, just until combined.

  • Step 4: Season with black pepper.

  • Step 5: In a skillet heat 2 inches of oil to medium heat.

  • Step 6: Drop heaping tablespoonfuls into skillet, then fry for 3 minutes on each side or until golden brown.

  • Step 7: Drain on paper towels.
