Step 1: In an extra large skillet or pot, fry the bacon pieces until just crisp, remove the bacon and bacon fat to a bowl; set aside.
Step 2: Slice the cabbage into 1 to 2-inch pieces. Place in a large skillet. Pour in water, bring the water to a boil over medium-low heat and then reduce the heat to a medium-low. Add the pepper and salt to the skillet or pot, cover with a lid, and simmer for about 30 minutes, stirring very frequently and cooking until the cabbage is tender and all water has evaporated.
Step 3: Mix the cooked bacon and the bacon grease into the cooked cabbage along with 3-4 tablespoons of butter. Season with more salt and pepper. Spoon into a serving bowl. Sprinkle with Parmesan cheese.
Step 4: Before serving, stir in the butter.
