Step 1: Pour the candy corn into a microwave safe bowl and microwave it for 1 minute, remove from the microwave, stir and microwave again for 30 seconds, remove, stir. Repeat at 30 second intervals until the candy corn is completely melted.
Step 2: Stir in the peanut butter until smooth. If the candy corn starts to harden before you have a chance to mix in the peanut butter, return it to the microwave for another 30 seconds (repeat if needed), until it's smooth.
Step 3: Spread mixture evenly into a 8 x 8-inch baking pan which has been coated with nonstick cooking spray (if you want thinner bars, use a 9 x 13-inch coated pan).
Step 4: Let mixture cool completely.
Step 5: Melt chocolate chips in microwave, stirring at 30 second intervals, or in a double boiler over simmering water.
Step 6: You can just pour over the cooled peanut butter mixture and spread evenly. When set, cut into bars (or cut bars first and dip them in chocolate to cover them.)
Step 7: If cutting into bars first to coat, add 2 tablespoons coconut oil (or solid shortening) to melted chocolate for the right consistency for dipping.
