Ingredients

The ingredients are:
  • 7 pounds carrots (baby carrots)
  • 3 cups water
  • 2 cups brown sugar (firmly packed brown sugar)
  • 3 tablespoons orange juice (concentrate)
  • 1 tablespoon ginger (optional)

How to Make

  • Step 1: Clean and peel carrots.(or just use baby carrots). Cut into 2 inch pieces.

  • Step 2: Combine water and brown sugar.

  • Step 3: Put carrots in another pan and bring to a boil; cook for 10 minutes.

  • Step 4: With the brown sugar, simmer till sugar is dissolved. Simmer for 5 minutes.

  • Step 5: Add orange juice concentrate; reduce heat and keep hot.

  • Step 6: Using slotted spoon, drain carrots and pack into hot jars, leaving 1 inch head space.

  • Step 7: Ladle hot syrup into jars covering carrots and leaving 1 inch head space

  • Step 8: Put a slice of ginger in jar if you would like a small piece, so its not to strong. Remove any trapped air bubbles.

  • Step 9: You may need to add more syrup.

  • Step 10: Process jars at 11 lbs pressure for 30 minutes.
