Ingredients

The ingredients are:
  • 1/2 cup celery, finely diced
  • 1/3 cup onion, finely diced
  • 2 tablespoons unsalted butter
  • 1 package (8 ounce) cream cheese (cubed)
  • 2 cups half and half
  • 1/2 cup chicken stock
  • 1 1/2 cups cubed potatoes (cooked till just tender)
  • 2 tablespoons crumbled bacon bits
  • 3 tablespoons dry white wine (or white grape juice w/1/2 t white wine vinegar)
  • 1/2 teaspoons salt
  • 1/4 teaspoons white pepper
  • 1/2 pound frozen shrimp (frozen cooked shrimp, thawed, drained and chopped in 1/2" pieces)
  • Fresh dill for garnish

How to Make

  • Step 1: In a large saucepan, saute celery and onions in butter.

  • Step 2: Add cream cheese cubes, half & half and chicken stock. Stir over low heat until cream cheese in completely melted. (You may need to use a wire whisk)

  • Step 3: Add potatoes, shrimp, white wine (or white grape juice w/white wine vinegar), salt and pepper. Heat thoroughly on medium-low heat, stirring occasionally (don't let it boil). Stir in crumbled bacon bits.

  • Step 4: Ladle out in bowls and snip some of the fresh dill on top for garnish.
