Ingredients

The ingredients are:
  • DRESSING
  • 1 can (10 ounce) Rotel
  • 1 carton (8 ounce) sour cream
  • 4 ounces cream cheese (softened)
  • 1 teaspoon ground cumin
  • 1 to 2 garlic clove, minced
  • SALAD
  • 4 cups shredded lettuce (iceberg, about 1 small head)
  • 1 can (15 ounce) black beans (rinsed and well drained)
  • 1 can (15 ounce) whole kernel corn (well drained)
  • 2 avocado, peeled and diced
  • 1 jar (4 ounce) diced pimento (drained)
  • 1 1/2 cups cheddar cheese, shredded
  • 2 cans (4 ounce) olives, sliced
  • Chopped green onion

How to Make

  • Step 1: Mix all dressing ingredients with mixer. Chill in fridge for a few hours.

  • Step 2: In a large trifle bowl or glass bowl, layer lettuce on bottom then next 6 ingredients. Spoon dressing mixture evenly over top. Sprinkle with green onions. Cover and chill for one hour.
