Step 1: In a saucepan over medium heat bring the water and sugar to a boil, stirring until sugar dissolves. Mix in the condensed milk and then the lime juice. Transfer mixture to a medium bowl; place over a large bowl filled with ice and let mixture cool for about 30 minutes.
Step 2: Process mixture in an ice cream maker according to manufacturer's instructions. Transfer sorbet to medium container and freeze until firm - at least 4 hours or up to 2 days.
