  • 4 tablespoons butter
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 4 large eggs
  • FILLING
  • 1/2 cup granulated sugar
  • 1 tablespoon butter
  • 1 large egg
  • 1 cup milk
  • 2 tablespoons cornstarch
  • 3 tablespoons water
  • 1 tablespoon vanilla extract

How to Make

  • Step 1: Bring water to a boil, add butter and flour then stir like crazy, stir until thick, then allow to cool.

  • Step 2: Stir in eggs one at a time, then add baking powder.

  • Step 3: Drop in gem pans (muffin tins, baking sheets, the bigger the puff the less you make) bake 45 minutes (others say 30 minutes at 400 degrees ).

  • FOR THE FILLING

  • Step 4: Boil together, milk, butter, sugar and egg (stirring constantly with whisk) when boiling, add cornstarch dissolved in water, boil until thick. Add vanilla.
