Ingredients

The ingredients are:
  • 2 tablespoon oil
  • 1 medium yellow onion, chopped
  • 1 large clove garlic, finely minced
  • 1 pound lean ground beef (or ground turkey)
  • 1 teaspoon salt
  • 3/4 teaspoon black pepper
  • 1 1/2 teaspoons fresh rosemary, finely chopped
  • 1 1/2 teaspoons fresh thyme, finely chopped
  • 1/2 teaspoon dried oregano
  • 2 tablespoons steak sauce (bottled)
  • 1 quart beef stock (unsalted)
  • 1 quart water
  • 3 cups cut green beans (fresh or frozen)
  • 2 cups cubed potatoes (peeled and cubed in 1/2")

How to Make

  • Step 1: Pour oil in stock pot and heat on medium heat. Add onions and garlic. Saute till onions are translucent. Add ground meat, break up as it's browning. Add seasonings, herbs and steak sauce, and stir in.

  • Step 2: Pour in beef stock and water. Bring to a boil. Reduce heat to a simmer. Let simmer for about 15 minutes covered. Add beans and let simmer covered for about 20 minutes. Add potatoes and let simmer till they're just tender, but not so they dissolve into the soup, about 15 minutes. Serve with some crusty Italian bread.

  • Step 3: Sodium content is more like 900 mg per serving if serving 4. And 600 mg per serving if serving 6.
