Ingredients

  • 4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup water (cold)
  • 1 tablespoon vinegar
  • 2 egg yolks
  • BUTTER MIXTURE
  • 1 cup margarine
  • 1 tablespoon lard
  • 4 tablespoons flour
  • NUT FILLING
  • 1 pound walnuts
  • 3 egg whites
  • 1/2 cup granulated sugar
  • 1/2 fresh lemon rind
  • POT CHEESE FILLING
  • 1 pound dry curd cottage cheese
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 eggs
  • CANNED POPPY SEED FILLING
  • 1/4 pound ground poppy seed
  • 1/2 cup granulated sugar
  • 1 cup milk
  • 2 teaspoons butter
  • 2 teaspoons fresh lemon rind
  • APRICOT FILLING
  • 1/2 cup dried apricot
  • 1/2 cup granulated sugar (to taste)
  • 1/2 cup crushed pineapple (drained, optional)

How to Make

  • FOR THE DOUGH

  • Step 1: Mix and blend flour, baking powder, water, vinegar, and egg yolks until dough comes clean of hands. Chill.

  • Step 2: Butter Mixture:.

  • Step 3: Mix margarine, lard and flour together and allow it to soften.

  • Step 4: When dough is chilled, roll it out and spread with butter mixture; fold dough and refrigerate.

  • Step 5: Repeat this process 4 times; next day, cut the dough into squares with a hot knife.

  • Step 6: Fill with chosen filling.

  • Step 7: Bake at 375 degrees Fahrenheit.

  • FOR THE NUT FILLING

  • Step 8: Grind nuts.

  • Step 9: Beat egg whites until stiff but still moist.

  • Step 10: Fold in sugar and nuts carefully.

  • Step 11: Add lemon rind.

  • FOR THE POT CHEESE FILLING

  • Step 12: Mash cottage cheese with fork.

  • Step 13: Add sugar, salt and eggs. Mix very well.

  • Step 14: Poppy seed Filling:.

  • Step 15: Cook poppy seeds, sugar, milk, and butter until thick, for 10 to 15 minutes on low flame.

  • Step 16: Add lemon rind.

  • Step 17: Cool well before using.

  • FOR THE APRICOT FILLING

  • Step 18: Cook dried apricots until tender; mash and add sugar to taste.

  • Step 19: Drained crushed pineapple may be added.
