Step 1: To make glaze, combine all ingredients in a medium jug and mix well.
Step 2: Pour half the mixture into a small saucepan, reserve.
Step 3: Place ribs in a single layer in a large oiled roasting pan.
Step 4: Stir water into remaining glaze in the jug and pour over ribs, turning them to coat.
Step 5: Cover pan tightly with greased foil.
Step 6: Cook in moderately slow oven 160Cfor about 1 1/2 hours, turning half way through, or until pork is tender and then remove from the oven.
Step 7: Meanwhile, bring saucepan of reserved glaze to boil over a high heat and then gently boil for 3 minutes or until slightly thickened.
Step 8: Brush glaze over ribs and serve with remaining glaze, rocket leaves and shoestring fries.
