Ingredients

The ingredients are:
  • 1.3 kilograms pork ribs (American style cut into 15cm lengths)
  • 1 1/4 cups water
  • Rocket leaves and shoe string fries to serve
  • BOURBON GLAZE
  • 1/2 cup maple syrup
  • 1/4 cup brown sugar (firmly packed)
  • 1/4 cup bourbon whisky
  • 2 tablespoons tomato paste
  • 2 tablespoons malt vinegar
  • 1 tablespoon Dijon mustard
  • 3 teaspoons smoked paprika
  • 1/2 teaspoon cayenne pepper

How to Make

  • Step 1: To make glaze, combine all ingredients in a medium jug and mix well.

  • Step 2: Pour half the mixture into a small saucepan, reserve.

  • Step 3: Place ribs in a single layer in a large oiled roasting pan.

  • Step 4: Stir water into remaining glaze in the jug and pour over ribs, turning them to coat.

  • Step 5: Cover pan tightly with greased foil.

  • Step 6: Cook in moderately slow oven 160Cfor about 1 1/2 hours, turning half way through, or until pork is tender and then remove from the oven.

  • Step 7: Meanwhile, bring saucepan of reserved glaze to boil over a high heat and then gently boil for 3 minutes or until slightly thickened.

  • Step 8: Brush glaze over ribs and serve with remaining glaze, rocket leaves and shoestring fries.
