  • 3 tablespoons oil
  • 2 garlic cloves
  • 1 sprig rosemary
  • 1 teaspoon thyme
  • 1 tablespoon parsley
  • 2 cups white wine
  • 2 whole tomatoes
  • 1 1/2 pounds potatoes (4 potatoes, sliced)
  • 1 teaspoon vinegar
  • 1 teaspoon salt
  • 1 teaspoon pepper

How to Make

  • Step 1: Fry the rabbit and onion in oil.

  • Step 2: Mash together the garlic, rosemary, thyme, and parsley; add to white wine.

  • Step 3: Pour over rabbit; add tomatoes.

  • Step 4: Cover and cook 45 minutes at slow simmer.

  • Step 5: Add potatoes.

  • Step 6: Cook 30 more minutes until rabbit is done.
