Ingredients

The ingredients are:
  • 2 cans (15ounce) black beans (cooked and drained)
  • 1 can (15 ounce) chopped tomatoes
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, finely minced
  • 2 jalapenos, chopped
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 lemon slice
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • Hot sauce, 1 dash

How to Make

  • Step 1: In a 4-QT saucepan saute onion, garlic, peppers, chili powder and cumin in hot oil until tender.

  • Step 2: Stir in drained beans, undrained tomatoes, lemon, oregano, salt and hot sauce.

  • Step 3: Bring to a boil, reduce heat and simmer 15 minutes.

  • Step 4: Remove lemon slice and puree if desired.

  • Step 5: Serve with warm tortillas and your choice of toppings. Or, just enjoy as a thick soup with cheddar and a dollop of sour cream. Or on a bed of rice!
