Ingredients

The ingredients are:
  • 600 grams oranges (2 large, thick skinned oranges)
  • 1 cup water
  • 220 grams caster sugar (1 cup)
  • 125 grams dark chocolate

How to Make

  • Step 1: Quarter the oranges, peel away the skin in whole quarters, including the white pith. Cut orange skins into strips 1cm wide.

  • Step 2: Drop the strips into a medium pan of boiling water, return to boil then drain the skins and repeat the boiling process and drain twice more.

  • Step 3: Combine water and sugar in a medium pan, stir over heat, without boiling until the sugar is dissolved. Add the orange strips, bring to boil, then simmer, uncovered for 7 minutes or until strips become translucent. Stir gently from

  • Step 5: Using 2 forks or tongs, remove the orange strips from the pan to a wire rack over a tray. Allow the strips to dry overnight.

  • THE NEXT DAY

  • Step 6: You will need a covered tray with foil or waxed paper ~ Melt the chocolate in a small heatproof bowl over simmering water (I use the microwave) Dip half of each orange strip into the melted chocolate, place each one on the covered tray.

  • Step 7: Stand, uncovered until completely set.
