Step 1: Drain mushrooms and reserve about 1/4 cup of juice.
Step 2: Heat oil in a large skillet.
Step 3: Add beef, onion and celery, and saute until lightly browned.
Step 4: Add bean sprouts, consomme and mushrooms.
Step 5: Mix cornstarch with reserved mushroom liquid until smooth.
Step 6: Stir into beef mixture.
Step 7: Cook, stirring, for 10 minutes.
Step 8: Stir in soy sauce.
