Ingredients

The ingredients are:
  • 1 pound shredded red cabbage (4 cups shredded), 1/2 medium head)
  • 1 pound shredded green cabbage (4 cups shredded, 1/2 medium head)
  • 3 1/2 ounces shredded carrot (2 cup shredded)
  • 2.6 ounces raisins (1/2 cup golden raisins)
  • 1/3 cup chopped green onions (to taste)
  • 1/2 cup sunflower seeds (salted is the best to use)
  • 1 pound boneless skinless chicken breasts (cooked, shredded or fine diced)
  • 1/2 cup mayonnaise
  • 1/4 cup yogurt (Greek, plain)
  • 2 tablespoons lemon juice
  • 1/2 cup honey Dijon salad dressing (Wishbone makes a good dressing or just make your own)
  • 1/2 teaspoon dried thyme leaves
  • Salt & pepper

How to Make

  • Step 1: In large bowl, combine cabbage, carrots, currants, green onion, sunflower seeds, and chicken.

  • Step 2: In small bowl, combine mayonnaise, yogurt, lemon juice, salad dressing, and thyme and blend well. Pour over cabbage mixture and toss gently.

  • Step 3: Season with salt and pepper.

  • Step 4: Cover and refrigerate before serving.
