Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1 (12 ounce) yellow onion, peeled and chopped (1 large onion)
  • 2 cloves garlic, peeled and minced
  • 1 (6 ounce) green bell pepper, cored, seeded and diced (1 medium)
  • 16 ounces dry rice (2 cups uncooked long-grain white rice)
  • 3 cans (8 ounces each) tomato sauce
  • 2 cups water
  • 2 teaspoon salt
  • 1/4 teaspoon black pepper (ground)
  • 1 chipotle pepper, diced (canned in adobo sauce. Add some of the sauce if desired)

How to Make

  • Step 1: Heat oil in the pressure cooker over medium-high heat. Add onion, garlic and green pepper. Cook until the onion is soft.

  • Step 2: Add the rice and cook 1 minute.

  • Step 3: Add remaining ingredients; cover and lock the lid. Bring to high pressure over high heat. Lower heat to stabilize the pressure. Cook for 7 minutes.

  • Step 4: Remove from heat and let pressure drop using the quick-release method.

  • Step 5: Unlock lid and stir rice before serving.
