  • 8 ounces dry pearl barley (1 cup dry, rinsed and drained)
  • 4 1/2 cups water
  • 1 tablespoon oil (vegetable oil)

How to Make

  • Step 1: Combine all ingredients in pressure cooker.

  • Step 2: Cover and lock lid. Bring to pressure over high heat. Lower heat to stabilize pressure.

  • Step 3: Cook for 15 minutes.

  • Step 4: Remove from heat and let pressure drop using quick-release method.

  • Step 5: Unlock and remove lid. The barley should be slightly chewy. If it is too hard, bring up to a simmer and cook until done, stirring.

  • Step 6: Drain in a colander and use in your recipes.
