Ingredients

The ingredients are:
  • 3 pounds apples (peeled, cored and quartered, your choice of variety)
  • 1/3 cup fruit juice (passion fruit juice, strained, or nectar)
  • 1/2 vanilla bean (split)
  • Fresh ginger (2 slices, 1/4-inch, gently crushed)
  • 1/2 cup mirin
  • 3 tablespoons honey (or to taste)

How to Make

  • Step 1: Place all ingredients in a heavy non-reactive saucepan over medium heat.

  • Step 2: Cover and cook until apples are very soft, 10-15 minutes. Reduce temperature if apples start to boil over.

  • Step 3: Remove from heat and take out ginger and vanilla bean.

  • Step 4: Place apple mixture in food processor and puree into a smooth sauce.
