Step 1: Preheat oven to 350°F.
Step 2: Combine curry mixture ingredients in a large bowl.
Step 3: Dust chicken in curry mixture.
Step 4: Pan-fry chicken in wok over high heat.
Step 5: Combine sauce ingredients and set aside.
Step 6: Combine seasonings.
Step 7: Place chicken in a baking pan, and pour sauce over the top.
Step 8: Sprinkle with seasoning mixture.
Step 9: Bake for 45 minutes.
Step 10: Pour chicken curry over a bed of cooked rice.
Step 11: Garnish with papaya, citrus fruit, cilantro and flowers.
Step 12: To eat, break off pieces of roti or tortilla and use them to scoop up curry.
