Step 1: Preheat oven to 350°F.
Step 2: Sift cornmeal, flour, sugar, baking powder and salt into a medium bowl.
Step 3: In a separate bowl whisk together melted butter, coconut milk, and eggs.
Step 4: Combine wet and dry mixtures.
Step 5: Stir in pineapple.
Step 6: Pour into a lightly greased 9" cake pan.
Step 7: Bake until firm and golden brown, about 35 minutes.
Step 8: Cool in pan for 30 minutes.
Step 9: Loosen edges of cornbread from pan.
Step 10: Place serving plate on top of pan, and invert cornbread onto plate.
