  • 1/2 cup cornmeal
  • 1 1/2 cups cake flour
  • 2/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup melted butter
  • 1 1/4 cups coconut milk
  • 2 large eggs
  • 1 can (8 ounce) crushed pineapple (drained)

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Sift cornmeal, flour, sugar, baking powder and salt into a medium bowl.

  • Step 3: In a separate bowl whisk together melted butter, coconut milk, and eggs.

  • Step 4: Combine wet and dry mixtures.

  • Step 5: Stir in pineapple.

  • Step 6: Pour into a lightly greased 9" cake pan.

  • Step 7: Bake until firm and golden brown, about 35 minutes.

  • Step 8: Cool in pan for 30 minutes.

  • Step 9: Loosen edges of cornbread from pan.

  • Step 10: Place serving plate on top of pan, and invert cornbread onto plate.
