Step 1: Slice the sausage in half lengthwise.
Step 2: Preheat grill to medium-high.
Step 3: Brush and oil grill grate.
Step 4: Grill sausage, cut side down, until sizzling and golden brown, 3-5 minutes.
Step 5: Turn sausage over.
Step 6: Thickly sprinkle cut side with cheese.
Step 7: Close grill lid and continue grilling until sausage is browned on uncut side and cheese is melted and bubbling, about 3 minutes more.
Step 8: Using a spatula, carefully transfer the linguica to a cutting board, keeping the cheese on top.
Step 9: Cut crosswise into 1" pieces.
Step 10: Serve on toothpicks.
