Step 1: Combine all ingredients in a large bowl.
Step 2: Knead and squeeze with your hands until thoroughly blended, 3-4 minutes.
Step 3: To test for seasoning, take a small amount of the mixture and saute it in a nonstick skillet until cooked through, then taste and adjust seasonings. NEVER eat raw pork.
Step 4: Lightly oil a large plate.
Step 5: Divide meat mixture into 8 equal portions.
Step 6: Lightly wet your hands with cold water.
Step 7: Roll each portion into a sausage about 3" long and 1" in diameter.
Step 8: Place sausages on oiled plate as they are made.
Step 9: Cover loosely with plastic wrap and chill 2-4 hours.
Step 10: To cook:.
Step 11: Preheat grill to high.
Step 12: Oil the grill grate.
Step 13: Arrange sausages on grill.
Step 14: Cook, turning with a spatula, until cooked through and nicely browned, 6-8 minutes.
