  • 1 (9-inch) pie crust (unbaked pastry)
  • 1 cup all-purpose flour
  • 2/3 cup light brown sugar, packed
  • 1 tablespoon unsalted butter
  • 1 teaspoon baking soda
  • 3/4 cup hot water
  • 1 cup molasses
  • 1 large egg (slightly beaten)
  • Whipped cream, for garnish (optional)

How to Make

  • Step 1: Preheat oven to 400F.

  • Step 2: In a bowl, mix together flour, brown sugar and butter with a fork until crumbly. Measure out half this mixture and set aside.

  • Step 3: In a separate bowl, dissolve baking soda in hot water. Add molasses and egg, then stir in half the crumb mixture.

  • Step 4: Pour into unbaked pie crust and top with remaining crumb mixture.

  • Step 5: Bake for 10 minutes and then reduce oven to 325F. and continue baking for another 30 minutes.

  • Step 6: Cool and serve with whipped cream if desired.
