Ingredients

The ingredients are:
  • 1 1/2 pounds Italian sausage (links)
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 2 1/4 pounds yellow onions (3 large onions, cut in slivers)
  • 1 1/4 pounds red bell peppers (3 sweet red peppers, seeded and cut in strips)
  • 1 1/4 pounds green bell peppers (3 green bell peppers, seeded and cut in strips)
  • 1/2 teaspoon oregano

How to Make

  • Step 1: Pierce each sausage in several places and place in a heavy frying pan with 1 tablespoon of oil.

  • Step 2: Cook over medium-low heat, turning occasionally, until well-browned.

  • Step 3: While sausages are cooking, add 1 tablespoon of olive oil and saute the garlic and onion.

  • Step 4: Stir in peppers and oregano and cook until onions are lightly browned and the peppers are tender.
