Step 1: Preheat grill to high.
Step 2: Melt butter in a small saucepan over low heat.
Step 3: Add mint, ginger, garlic and zest.
Step 4: Increase heat to medium.
Step 5: Cook until mixture is fragrant but not browned, about 3 minutes.
Step 6: Stir in fish sauce and lime juice.
Step 7: Bring to a boil and remove from heat.
Step 8: Brush butter mixture over cut side of lobsters.
Step 9: Sprinkle with salt and pepper.
Step 10: When ready to cook, oil the grill grate.
Step 11: Arrange lobster on the grate, cut side down, and grill for 6-8 minutes.
Step 12: Turn with tongs.
Step 13: Grill for 6-8 minutes more, basting generously several times with butter mixture.
Step 14: Serve with remaining butter, if any.
